The show of support comes in light of Taco Bell having filed legal petitions to cancel the federal trademark registrations for “Taco Tuesday.”

A select group of spirited influencers gathered for the premiere of Sol Agave’s new innovative and ultra-delicious Taco Tuesday menu on Tuesday, August 9th at their San Juan Capistrano location. Secret Taco Tuesday is a unique dinner society that focuses on Tacos Tuesday, this was the first Secret Taco Tuesday to take place at a restaurant. First Secret Taco Tuesday Partners with Chef Karla Vasquez Ahead

The intimate evening featured delicious menu items from Chef Karla Vasquez. Her new concept, Chelas Mexican Kitchen, is set to open in San Clemente this summer.

Guests experienced decadence as they were chauffeured to the secret location and greeted with Herradura Pink Glow Pineapple Margaritas and stunning views. Chef Karla, who has been curating exceptional dining experiences for private parties for years, created a truly epic 5 course meal paired with wines and margaritas.

Te'kila

Te’kila is LA’s go-to tequila oasis, boasting over 150 different bottles. Their daily happy hour – featuring made-to-order margaritas – is a draw for visitors and locals alike. On Tuesdays, they have tacos all day, choice of chicken, asada steak, carnitas for $2 if you order three and purchase of a drink. We highly recommend the Te’kila Margarita with fresh lime juice, orange juice, agave nectar, and El Jimador Blanco Tequila for $12. They also have $3 vegan taco options.

Long Beach Taco Co.

Their authentic Mexican cuisine, hand-made tortillas & brunch are why they are one of LA’s favorite go-to spots. They have 36 craft beers and delicious late-night grub. We recommend their $2 tacos, choice of asada, baja fish, birria, chicken, carnitas, fried avocado, calabasitas, mushroom, rajas (peppers) con queso, and the OG with veggies, beans, and guacamole. They go great with their 32-ounce micheladas.

El Cholo Santa Monica

El Cholo is LA's very first Mexican restaurant. Since first opening their doors in 1923, El Cholo has operated as a family-owned business and today, the restaurants are run by Ron Salisbury, grandson of the founders. We recommend going to their Santa Monica location for some fresh ocean air, the $5 Tres Cantina Tacos & $7 El Cholo Margaritas all day long. 

SaMo’s Oaxaca

This family-owned restaurant serves authentic Oaxacan and Mexican casual food. They’re open for takeout, delivery and offer outside patio seating. Mercado Los Angeles

If you’re looking for a place to grab some crave-worthy food, Petite Taqueria provides a trendy dining experience that will leave you full with a smile. We can’t get enough of their Soft and Crispy Shell Tacos with choice of chicken, baja fish or steak for $2. Margaritas are $9 but ½ off margarita pitchers all night long are our favorite!

Lola's Mexican Cuisine

Established in 2007, the Lola’s family has always had a love affair with Mexican recipes that have been passed down for generations. Everything is made from scratch and their vegan options are plentiful. Their menu changes with the seasons and the availability of ingredients. On Tuesdays, we recommend their $2 tacos with choice of mesquite grilled chicken, carne asada, or zucchini mushroom. You can’t go wrong with their specialty tacos for $2.50 too. Descanso-An OC Mexican Dining Experience

You know the saying "Taco Tuesday"?  It is part of our weekly lives as a Southern California community.  We are blessed with many options to choose from: the fast-food version, the make it at home yourself version, the taco truck version, the happy hour version, and so on.  Now I can't say "Taco Tuesday" without thinking of the BEST taco Tuesday experience my family has ever had!  I am NOT exaggerating!  It was a night to be remembered and to be repeated monthly.

I have heard of Descanso restaurant several times over the years.  I didn't know much about this restaurant and because the restaurant is in Costa Mesa, I didn't give it much thought. I was then given the opportunity to experience their TAQUERO Tuesday in the Plancha room which is an immersive experience as you watch your food being prepared right in front of you.  The place was packed which is a good sign to me as that shows a great repeat business and people were happy all around us.

The taco is deceptively simple by reputation, tortilla, filling, and perhaps some garnishes or salsa on top. But the reality is that so much goes into the preparation for the myriad fillings of the ubiquitous taco that to dismiss this handheld meal as no more than street food is a huge disservice. Mexican food is a UNESCO-designated cultural treasure, and in the taco category, these vessels of masa, meat or meat-like proteins and spice are widely varied.

But it's also easy to get lost among all the options to stuff in tortillas and fall back on the basics. Which is fine, but if you're not exploring the wide world of taco fillings, you're doing your palate a disservice. To give you the knowledge you need to live your best taco life, we enlisted the expertise of Steven Alvarez, an assistant English professor at St. John’s University in Queens who came to fame when he started teaching a taco literacy course at the University of Kentucky.

Crispy Cheese Chicken Tacos with Avocado Cilantro Sauce

These tacos are delicious, fun, unique, and different.

Ingredients

Avocado Cilantro Sauce

Directions

  1. In a large skillet, heat the olive oil over high heat. Add the meat and onion. Cook, breaking up the meat as it cooks, until browned, about 5 minutes. Add the chipotle chili powder, cumin, garlic powder and salt. Add the enchilada sauce. Reduce the heat to medium and simmer until the sauce has thickened slightly around the meat, about 5 minutes. Remove from the heat.
  2. To make the avocado sauce. Combine all ingredients in a blender, blend until creamy. Season with salt.
  3. To make the tacos. Layer the meat and a sprinkle of cheese to one side of the tortilla. Try not to over stuff the tacos. Fold the tortilla over the ingredients. Repeat with remaining tortillas and ingredients.
  4. Heat a skillet over medium heat. Arrange 2-3 jalapeño slices in a line in the skillet. Sprinkle over 1/3 cup cheese in 3–4-inch circle/square. Place 1 taco to 1 side of the cheese round. Cook 3-5 minutes. When the cheese starts to crisp on the bottom, use a spatula to gently wrap the taco up in the cheese. Continue to cook 3-4 minutes, until crisped all over.
  5. Serve warm with avocado sauce and any number of desired toppings, whatever you love!

Carne Asada Street Tacos

These tacos may be basic, but they are delicious and so easy to make. Pair them with your favorite sides and a classic margarita and you have the perfect Taco Tuesday meal. 

Ingredients

  • 2 Tbsp vegetable oil
  • 3 lbs. flank steak
  • 1 diced large white onion, divided
  • 3 fresh limes
  • 1 bunch cilantro, chopped
  • 16 mini corn tortillas
  • Kosher salt & fresh ground black pepper to taste 

Directions 

  1. Cut the steak into bite-size pieces.
  2. Heat the vegetable oil in a large frying pan or skillet over medium-high heat.
  3. Add the steak and sauté until the meat starts to brown.
  4. Add half of the onion to the skillet and sauté with the beef until the onions start to soften and become translucent. Season with salt and pepper.
  5. Squeeze the juice of two limes over the steak and onions. Continue cooking until the steak is cooked through and the onions have browned. 
  6. Using your stovetop, place each tortilla directly on the heat source until the tortillas become warm and pliable, about 10 secs. Stack tortillas and cover with a paper towel to keep warm.
  7. To prepare a taco, take two tortillas, and spoon 2 tablespoons of the steak/onion mixture into the center. Top steak with a sprinkling of diced raw onion, fresh chopped cilantro, and a lime wedge for extra lime juice. 

Baked Chicken Tacos

These tacos will change the way you think of tacos and will make your Taco Tuesdays so much easier and tastier. Not only that but you can use any fillings you like with these quick and easy tacos.

Ingredients

  • ½ cup onion minced
  • 2 cups cooked chicken diced
  • 1 cup black beans 
  • 1 cup diced tomatoes
  • 3 tablespoons 
  • 12 hard shell tacos
  • 1 cup shredded cheese
  • cilantro to garnish
  • jalapeno slices

Directions

  1. Preheat oven to 400F.
  2. Line a 9x13 baking dish with foil or parchment paper.
  3. Heat olive oil over medium heat in a large skillet.
  4. Add the onions and cook for 3-4 minutes or until lightly golden.
  5. Add the chicken, black beans, tomatoes, and taco seasoning.
  6. Cook for 3-4 minutes stirring occasionally.
  7. Line taco shells in a baking dish. Spoon a few tablespoons of the chicken into each taco shell.
  8. Top with a sprinkle of cheese and a jalapeno slice and bake for 12-15 minutes or until the cheese is melted.
  9. Serve with a side of sour cream, lettuce, and slices of lime if desired

Ground Beef Tacos

Ground beef crunchy tacos, depending on where you grew up, they may be nostalgic. They are very easy and tasty. These tacos make your Tuesday fun! Try them with this Restaurant Style Salsa Recipe

Ingredients
• 1 pound ground beef
• 2 tablespoons tomato paste
• ½ cup water
• 8 - 10 hard taco shells or soft
• toppings as desired: cheese, shredded lettuce, onions, tomatoes, olives, whatever you love

Taco Seasoning
• 1 tbsp Chili Powder
• ½ tsp Garlic Powder
• ½ tbsp Cumin
• ½ tsp Onion Powder
• ¼ tsp Red Pepper
• 1 tsp Black Pepper
• ½ teaspoon Salt or to taste

Directions

  1. Brown the ground beef over medium heat. Drain any fat before adding seasonings.
  2. Add tomato paste, water, and seasonings, and bring to a simmer until thickened.
  3. Prepare hard shells. They should go in the oven, follow the directions on the box of shells.
  4. Fill taco shells with meat and desired toppings.
  5. Enjoy

Vegan Cauliflower Tacos with Lime Crema

These smoky and spicy cauliflower tacos are perfect for Taco Tuesday, or any day of the week!

Ingredients

For the Cauliflower

  • 1 Head Cauliflower chopped into florets
  • 4 cloves Garlic divided, minced
  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Cumin
  • 1/2 tsp Aleppo Pepper or sub red pepper flakes
  • 3/4 tsp Ancho Chile Powder divided
  • 1/4 tsp Kosher Salt
  • 1 1/2 tbsp Avocado Oil

For the Crunchy Almonds

  • 1 tbsp Extra Virgin Olive Oil
  • 1/3 cup Almonds raw, roughly chopped
  • 1/2 tsp Cumin Seeds
  • Kosher Salt to taste

For the Lime Crema

  • 1/3 cup Mayonnaise
  • 2 tsp Lime Juice plus zest from half the lime
  • 1/4 cup Cilantro chopped
  • 1/4 tsp Kosher Salt

For the Filling

6 Corn Tacos

  • 1/4 head Savoy Cabbage sliced thin
  • 1 Jalapeño sliced
  • 1 Avocado cubed
  • Cilantro for garnish
  • 1/4 Red Onion sliced thin

Directions

Make the Cauliflower

Preheat the oven to 425ºF (218ºC) and line a baking sheet with parchment paper.

In a large bowl, add the cauliflower florets along with half the minced garlic cloves, smoked paprika, cumin, Aleppo pepper, 1/2 tsp Ancho Chile powder, salt and avocado oil and toss well. Add to the baking sheet, making sure there is enough space to allow the cauliflower to crisp. Bake for 16 minutes, remove, flip the cauliflower, and bake for an additional 16 to 17 minutes.

Make the Crunchy Almonds

In a skillet over medium-low heat, add the extra virgin olive oil, and the remaining minced garlic cloves. Cook for 1 minute, until just starting to get fragrant, then add the almonds and toast for 3 to 4 minutes, until toasted and fragrant. Add the cumin seeds, remaining 1/4 tsp ancho chile powder and mix to combine. Turn off the heat and remove, draining any excess oil on a plate lined with paper towel. Season with a pinch of salt to taste.

For the Lime Crema

In a blender or food processor, add the mayonnaise, lime juice and zest, cilantro, and salt. Pulse until the crema is smooth and the cilantro is incorporated.

For Assembly

Place cabbage into the taco, followed by the cauliflower, spiced almonds, and then the additional toppings. Drizzle the crema on top. Serve and enjoy!
