Who says tacos need meat to steal the show? These roasted sweet potato tacos bring smoky flavor, creamy chipotle sauce and fresh pico de gallo together for one seriously delicious Taco Tuesday.

Sweet potatoes have officially entered their taco era, and they’re doing quite well.

Forget everything you thought you knew about this humble root vegetable. When roasted until golden and caramelized, sweet potatoes become tender on the inside, slightly crispy on the edges and packed with naturally sweet, earthy flavor.

Now imagine those warm, roasted bites tucked into soft corn tortillas, topped with fresh pico de gallo, bright cilantro and a generous drizzle of smoky chipotle-lime crema.

Suddenly, vegetables are the most interesting thing happening at dinner.

And we’re completely here for it.

Why Sweet Potatoes Make Amazing Tacos

The secret is contrast.

Sweet potatoes bring a natural sweetness that pairs beautifully with bold Mexican-inspired spices. A little chili powder, cumin and smoked paprika creates warmth and depth, while roasting brings out those irresistible caramelized edges.

Then comes the balance: tangy lime, spicy chipotle crema and fresh pico de gallo. Every bite delivers a little sweetness, a little heat, a little crunch and a whole lot of flavor. These vegetarian tacos are hearty enough to satisfy, colorful enough to impress and simple enough to become a regular part of your Taco Tuesday rotation. Plus, they’re especially wonderful during fall when sweet potatoes are in season.

  • 1 tbsp fresh lime juice
  • 1 tsp honey or agave syrup (optional)
  • 1–2 tbsp water, to thin
  • Pinch of salt

For Serving

  • 8 small corn tortillas
  • Fresh cilantro leaves
  • Lime wedges
  • Sliced avocado (optional)
  • Crumbled cotija cheese (optional)

Instructions

  1. Roast the Sweet Potatoes
    Preheat oven to 425°F.
Place sweet potato cubes in a large mixing bowl. Drizzle with olive oil and sprinkle with chili powder, smoked paprika, cumin, garlic powder, salt and pepper.
    Toss until evenly coated.
Spread in a single layer on a parchment-lined baking sheet, leaving a little room between the pieces.
Roast for 25–30 minutes, turning halfway through, until tender with beautifully caramelized edges.
  2. Make the Fresh Pico de Gallo
While the sweet potatoes roast, combine diced tomatoes, red onion, jalapeño, cilantro and lime juice in a bowl.
Season with salt and gently mix.
Let the pico de gallo rest for about 10 minutes to allow the flavors to come together.
  3. Whip Up the Chipotle-Lime Crema
In a small bowl, whisk together sour cream, minced chipotle pepper, adobo sauce, lime juice and honey or agave, if using.
Add a little water until the sauce reaches a smooth, drizzle-friendly consistency.
Taste and adjust the heat or acidity as desired.
For a milder version, start with half a chipotle pepper.
  4. Warm the Tortillas
Heat corn tortillas in a dry skillet over medium heat for approximately 20–30 seconds per side until soft, warm and pliable.
Keep them wrapped in a clean kitchen towel until ready to serve.
  5. Build Your Tacos
Place a generous portion of roasted sweet potatoes into each warm tortilla.
Top with fresh pico de gallo and a drizzle of chipotle-lime crema.
Finish with fresh cilantro leaves and a squeeze of lime.
Add avocado or cotija cheese if desired.
    Serve immediately and enjoy!

Make These Tacos Your Own
Add a Little Crunch: Top with finely shredded red cabbage, toasted pumpkin seeds or thinly sliced radishes.
Make Them Vegan: Use your favorite plant-based sour cream or cashew crema, substitute agave for honey and skip the cotija cheese.
Turn Up the Heat: Add extra chipotle, fresh serrano peppers or a drizzle of your favorite hot sauce.
Add More Protein: Black beans make a delicious addition and pair beautifully with roasted sweet potatoes.
Make It a Taco Bowl: Skip the tortillas and serve everything over cilantro-lime rice with black beans, avocado and plenty of chipotle crema.
