Ingredients:

For the Pomegranate Juice:

  • 2 large pomegranates

  • 1 oz pomegranate juice (freshly squeezed or store-bought)
  • 1/2 oz simple syrup or agave nectar (adjust to taste)
  • Ice cubes

  • Salt for rimming (optional)

Instructions:

Preparing the Pomegranate Juice:

  • Cut the pomegranates in half. Over a bowl, hold one half with the cut side down in the palm of your hand and tap the back with a wooden spoon. The seeds should begin to fall out.
  • Once all seeds are removed, put them in a blender or food processor and pulse a few times until they are broken up but not completely pureed.
  • Pour the mixture through a fine sieve or cheesecloth into a bowl, pressing to extract as much juice as possible. Discard the seeds and pulp.
  • Set the juice aside or refrigerate if not using immediately.

Making the Pomegranate Margarita:

  • If you like a salt-rimmed glass, moisten the rim of your glass with a lime wedge and dip it in salt. Set aside.
  • In a shaker, combine tequila, lime juice, triple sec, pomegranate juice, and simple syrup.
  • Fill the shaker with ice and shake until well-chilled.
  • Strain the cocktail into your prepared glass. If preferred, add ice to the glass before pouring.
  • Garnish with a lime wedge and a sprinkle of pomegranate seeds.
