Ingredients
Soup Base
- 1.5 lbs boneless, skinless chicken breasts (or thighs)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (10 oz) can Rotel (diced tomatoes with green chiles)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto or kidney beans, drained and rinsed
- 1 cup frozen corn
- 4 cups chicken broth
- 2–3 tbsp taco seasoning (store-bought or homemade)
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp smoked paprika (optional but delicious)
- Juice of 1 lime
- Salt & pepper to taste
Toppings (the fun part!)
- Crunchy tortilla chips (a MUST)
- Shredded cheese
- Sour cream
- Sliced jalapeños
- Cilantro
- Avocado
- Lime wedges
- Green onions
Instructions
- Add everything to the slow cooker
Place chicken breasts in the bottom of your slow cooker.
Add onion, garlic, tomatoes, Rotel, beans, corn, broth, taco seasoning, cumin, chili powder, paprika, lime juice, salt, and pepper.
- Cook low and slow
Cover and cook:
6 hours on LOW, or
3 hours on HIGH
- Shred the chicken
Remove the chicken, shred with two forks, and return it to the slow cooker.
Stir well to let the flavors meld.
- Serve + top it generously
Ladle into bowls and pile on the toppings especially crushed tortilla chips for that perfect crunchy, salty finish.

Make it creamy: Stir in 4 oz cream cheese during the last 20 minutes.
Spice it up: Add minced jalapeños or use hot Rotel.
