The Evolving Palette: Trends in Mexican Cuisine

Mexican cuisine, with its rich history, diverse flavors, and intricate techniques, has long been a global favorite. However, as with all culinary traditions, it has continued to evolve. The recent trends in Mexican dining not only pay homage to the ancient and time-tested, but they also infuse fresh, contemporary spins that cater to the changing palate of today’s discerning food lover.

1. Zooming into Regions

Gone are the days when Mexican food was painted with a broad brush. The global diner now seeks the specific. Whether it’s the complex mole sauces of Oaxaca, the seafood-dominated plates of Baja California, or the Mayan-influenced dishes from Yucatán, regional Mexican cuisines are stepping into the limelight.

2. The Magic of Pueblos Mágicos

The ‘Magic Towns’ of Mexico, known for their historical and cultural importance, are now also emerging as gastronomic destinations. From traditional candies in Morelia to coffee in Coatepec, these towns offer unique, localized culinary experiences.

3. Street Food, the Gourmet Way

While tacos, tlacoyos, and tamales have been street favorites forever, they are now finding their way into fine dining menus. Chefs are elevating these humble dishes with gourmet fillings, artisanal preparation methods, and plating techniques that are nothing short of art.

4. Beyond Tequila: The Agave Wave

Tequila is to Mexico what wine is to France. But there’s more to the agave spirit family. Mezcal, with its smoky allure, raicilla’s rustic charm, and the subtle complexity of bacanora, are capturing the imagination of spirit enthusiasts worldwide.

5. Health on the Plate

Modern Mexican restaurants are increasingly mindful of health. Ancient grains like amaranth and chia are back on the plate. Vegan and gluten-free variations of traditional dishes are becoming mainstream, ensuring the cuisine caters to all.

6. The Revival of Nixtamalization

A process as old as the Aztecs, nixtamalization is seeing a resurgence. More and more chefs are valuing this method for its nutritional benefits and the depth of flavor it brings, particularly in tortillas.

7. Green and Fresh: The Sustainable Turn

Mexican cuisine is tracing back its roots to sustainable practices. From farm-to-table eateries to establishments growing their own herbs and vegetables, the focus is on fresh, local, and sustainable.

8. A World of Fusion

Mexican flavors are going global! From sushi rolls with a spicy Mexican twist in Tokyo to Berlin food trucks selling chipotle-infused burgers, the world is blending and experimenting with Mexican ingredients.

9. Collaborate to Innovate

Pop-ups, chef swaps, and collaborations are the order of the day. Chefs from various culinary backgrounds are coming together to experiment and present Mexican food in ways previously unimagined.

Mexican cuisine’s beauty lies in its ability to evolve while staying deeply rooted in tradition. These trends are a testament to the cuisine’s dynamism, proving that even centuries-old traditions can adapt, innovate, and continue to tantalize taste buds globally. As diners, we’re just fortunate to witness and taste this evolution. ¡Buen provecho!

Taco Bell Will Help Pay For Your Taco Tuesday Celebration — Even If It’s Not At Taco Bell

To celebrate the liberation of the Taco Tuesday trademark registration in 49 states, and to support and spotlight restaurants who now have the right to freely use Taco Tuesday, Taco Bell has announced that on Tuesday, September 12, Taco Tuesday fans (nearly) everywhere* can celebrate Taco Tuesday (nearly) anywhere – and Taco Bell will help pay for it.

On Taco Tuesday, September 12, Taco Bell, in partnership with DoorDash, is opening a $5 million taco tab to cover a portion of taco fans’ orders from any participating vendor selling Mexican cuisine. Because now that Taco Tuesday is free* – your tacos should be, too.

Leading up to the September 12 celebration, all Taco Bell locations will be offering a free Doritos® Locos Taco every Tuesday, no purchase necessary, on 8/15, 8/22, 8/29 and 9/5**.

“Taco Tuesday belongs to all who make, sell, eat and celebrate tacos, and this Free-For-All will not only thank taco fans who supported the cause, but will also spotlight local restaurants and vendors who can now embrace Taco Tuesdays without fear of legal action,” said Taco Bell U.S. Chief Marketing Officer, Taylor Montgomery. “When tacos win, we all win. We all win when Taco John’s decides to release its trademark registration, we all win when taco vendors everywhere are free to join the movement, and we all win when taco fans can freely celebrate and support Taco Tuesdays at Taco Bell or anywhere else.”

Taco Tuesday Sign

The Road to Freeing Taco Tuesday
In May 2023, Taco Bell took a bold step on behalf of taco lovers nationwide by filing legal petitions to cancel the two Taco Tuesday trademark registrations. The aim was simple: to free the phrase for restaurants nationwide. The message was clear: Taco Tuesday belongs to everyone, from Taco Bell to Taco John’s to your favorite local taco spot.

In late July, Taco John’s courageously decided to abandon its Taco Tuesday trademark registration. Not only did Taco John’s act benefit thousands of businesses across 49 states by making the term Taco Tuesday more freely available, Taco John’s also made a meaningful donation to Children of Restaurant Employees (CORE) for $40,000, which the Taco Bell Foundation has matched.

Freedom Brewing Taco Tuesday sign

Supporting The Taco Community
Taco Bell has also committed to donating $1 million in partnership with the Taco Bell Foundation to support young people who make, sell, eat and celebrate tacos. Donations made by Rounding Up at checkout on Tuesdays will be matched up to $1 million. These donations will continue to fund the Taco Bell Foundation’s Community Grants and the Live Más Scholarship for fans and team members.

Sip Into Summer: Red Wine Sangria Recipe

Summer is synonymous with vibrant colors, warm weather, and most importantly, refreshing drinks. One of the best ways to enjoy the summer season is by sipping on a chilled glass of Sangria. Originally from Spain, Sangria has become a favorite all around the world. It’s perfect blend of wine, fruit, and a touch of sweetness makes it the ultimate summer beverage. In this article, we’ll dive into a simple yet delightful Red Wine Sangria recipe that you can whip up for your next gathering.

A Bit About Sangria
Sangria is a Spanish drink made with red wine, chopped fruits, a sweetener, and a small amount of brandy or any other spirit. You can also find variations with white wine known as Sangria Blanca. Its name is derived from the Spanish word ‘sangre,’ which means blood, referencing the deep red color of the drink.

Ingredients
• 1 bottle of red wine (750 ml) (Spanish wine like Tempranillo, Garnacha is preferred)
• 1 orange, thinly sliced
• 1 lemon, thinly sliced
• 1 apple, cored and cut into thin wedges
• 1 to 2 cups of seasonal fruits (like berries, peaches, or pineapple)
• ¼ cup of brandy
• ¼ cup of sugar or honey (adjust to taste)
• 1 can of soda water or lemon-lime soda (optional for a bubbly version)
• Ice cubes
• Fresh mint leaves for garnish (optional)

Instructions
• Prep the Fruit: Wash all the fruits properly. Thinly slice the orange and lemon and cut the apple into thin wedges. If you’re using other fruits like peaches or pineapples, cut them into bite-sized pieces.
• Mix Wine and Spirits: In a large pitcher, combine the red wine and brandy.
• Add Sweetness: Add sugar or honey to the pitcher. Stir well until the sugar is dissolved. Taste the mixture and adjust the sweetness according to your preference.
• Add Fruits: Add the sliced oranges, lemons, apples, and any other fruits you’re using to the pitcher. Stir to combine.
• Chill: Cover the pitcher with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight. This allows the flavors to meld together. The longer it sits, the more flavorful it will be.
• Serve: Before serving, if you want to add some bubbles to your Sangria, pour in the soda water or lemon-lime soda. Fill glasses with ice and pour the Sangria over the ice. You can also add some of the soaked fruits into the glasses.
• Garnish and Enjoy: Garnish with a sprig of fresh mint, if desired. Serve immediately and enjoy your refreshing Red Wine Sangria!

This Red Wine Sangria is not only easy to make, but it’s also incredibly versatile. Feel free to experiment with different fruits, adjust the sweetness, or even try different types of wine. Remember, the key to the perfect Sangria is allowing it to chill long enough for all the flavors to come together. So, raise your glass and toast to the joys of summer with this delectable drink. Cheers!

A Match Made in Culinary Heaven: The Rising Trend of Tacos and Champagne

In the eclectic world of culinary pairings, one combination is creating a fizz – Tacos and Champagne. This seemingly unlikely duo has been gaining popularity among food enthusiasts and connoisseurs. This article explores the rise of this trend, the synergy behind it, and how you can get in on the fun.

The Emergence of the Trend

It’s no secret that tacos have been a beloved staple for many, but when did the bubbly come into the picture? The trend of pairing tacos with Champagne began gaining traction in upscale restaurants and trendy urban eateries. Chefs and sommeliers discovered that the crisp and effervescent qualities of Champagne could beautifully cut through and complement the rich and varied flavors of tacos.

Why It Works

1. Balance of Flavors

Tacos are known for their robust flavors, combining spicy, savory, and sometimes sweet elements. Champagne, with its acidity and bubbles, acts as a palate cleanser. Effervescence helps in refreshing the palate, readying it for the next bite.

2. Complementing Textures

The crunchiness of a hard-shell taco or the soft, chewy texture of a corn tortilla can be the perfect foil for the lively and sparkling texture of Champagne. The bubbles in Champagne add an extra dimension to the dining experience.

3. Versatility

Tacos are incredibly versatile. From classic carne asada and al pastor to inventive fillings like Korean bulgogi or vegan alternatives, there’s a taco for everyone. Similarly, Champagne comes in various styles – Brut, Rosé, Blanc de Blancs. This diversity makes it easy to find combinations that work splendidly together.

4. Celebratory Nature

Champagne is often associated with celebrations and good times. Pairing it with tacos, which are generally considered comfort food, elevates the casual nature of the dish and turns any meal into a festivity.

How to Pair Tacos and Champagne

To get the most out of this culinary combination, consider the following:

1. Match Intensity

Pair bolder Champagnes, like a Vintage or Rosé, with heartier taco fillings like beef or lamb. Lighter Champagnes, like a Brut or Extra Brut, work well with lighter fillings such as fish or vegetables.

2. Experiment with Sauces

The sauces and salsas used in tacos can be pivotal in pairing. For a spicy salsa, try a sweeter Champagne to balance the heat. A dry Champagne can complement a citrusy or tangy salsa.

3. Temperature Matters

Ensure that the Champagne is well chilled, as this enhances its crispness, making it a better counterpart to the warm and flavorful taco fillings.

The pairing of tacos and Champagne reflects a broader movement in the culinary world, where boundaries are being pushed, and unconventional combinations are celebrated. It symbolizes an openness to experiment and find harmony in contrasts. So, next time you’re enjoying some delicious tacos, why not pop open a bottle of Champagne and toast to the delightful fusion of flavors? Cheers to a match made in culinary heaven!

The Art of Guacamole: Secrets to Making the Ultimate Guacamole

Guacamole, we can’t live without it! This creamy and zesty dip is a staple in many households and restaurants. But what’s the secret to making an extraordinary guacamole that leaves everyone wanting more? This article reveals the tricks and tips for crafting the ultimate guacamole.

1. Use Ripe Avocados

The foundation of great guacamole is ripe avocados. They should yield slightly when gently squeezed, indicating that they are ripe and ready. Under-ripe avocados won’t mash well, and overripe ones may have an off flavor. To speed up the ripening process, you can place avocados in a brown paper bag with a banana or apple.

2. Coarse Mashing

It’s tempting to mash avocados into a smooth purée, but the best guacamole has texture. Use a fork to coarsely mash avocados, leaving some small chunks for a more interesting mouthfeel.

3. Fresh Lime Juice is a Must

Lime juice adds acidity that balances the creaminess of avocados. It’s essential to use fresh lime juice as bottled juices can have a dull and sometimes bitter flavor. Adjust the quantity to your preference, but don’t skip on this key ingredient.

4. Season Generously

Don’t be shy with salt. Avocados need a good amount of salt to bring out their flavor. Taste and adjust as you go. Adding a dash of black pepper can also enhance the depth of flavors.

5. Include Cilantro

Cilantro is often a part of traditional guacamole recipes. It adds a fresh, herbal note that pairs wonderfully with the other ingredients. If you’re not a fan of cilantro, you can use chopped parsley or even a little bit of mint.

6. Onions and Garlic

Diced red or white onions contribute crunch and a slight pungency that cuts through the richness of the avocado. Fresh garlic, used sparingly, adds another layer of flavor. Some people prefer to use green onions for a milder taste.

7. Spice It Up

If you like a kick in your guacamole, add some diced jalapeños or a dash of cayenne pepper. Removing the seeds and membranes from the jalapeños will reduce their heat.

8. Add-ins for Extra Oomph

Consider adding diced tomatoes, roasted corn, or even pomegranate seeds for a twist. Some people also like to add a dash of cumin for a warm, earthy flavor.

9. Freshness is Key

Guacamole is best enjoyed fresh. However, if you must store it, press plastic wrap directly onto the surface of the guacamole to prevent air from reaching it. This helps to minimize browning. A few drops of lime juice on the surface can also help.

10. Serve at Room Temperature

While you might store guacamole in the fridge, it’s best served at room temperature. The flavors are more pronounced, and the texture is perfect.

Ready, Set, Guacamole!

You’re ready to make the ultimate guacamole. Grab some tortilla chips, fresh veggies, or tacos, and dive into the creamy goodness of homemade guacamole. Enjoy!

This article takes you on a journey through the best cervezas that the country has to offer.

1. Corona Extra ABV: 4.5%

Let’s start with an international favorite. Corona Extra is a pale lager and probably one of the most recognizable Mexican beers around the globe. It’s light, crisp, and extremely refreshing, especially when served with a wedge of lime. Perfect for sipping on a beach or at a BBQ.

2. Modelo Especial ABV: 4.4%

Modelo Especial is a rich, full-flavored pilsner-style lager that has an orange blossom honey aroma with a hint of herb. Modelo Especial’s light hop character, tantalizing taste, and slightly sweet finish make it an excellent choice for those looking for a balanced, easy-drinking beer.

3. Negra Modelo ABV: 5.4%

Also known as Modelo Negra, this is a Munich-style Dunkel lager, and it’s a true classic. With its slow-roasted caramel malts, it’s richer and darker than its sibling, Modelo Especial. It offers a smooth taste with hints of chocolate and a slightly nutty finish.

4. Pacifico Clara ABV: 4.5%

Also known as Cerveza Pacifico, this pilsner-style lager was first brewed in 1900. With a crisp and light flavor profile, Pacifico Clara is especially popular amongst surfers. It’s the beer to grab after a day in the sun and surf.

5. Dos Equis Ambar ABV: 4.7%

Tacos & Bubbles: The Ultimate Guide to Pairing Tacos with Wine and Champagne

It’s time to elevate your taco night with the irresistible duo of tacos and wine or champagne. Who says that wine and champagne should be reserved for fancy dinner parties? Tacos, with their complex flavors and textures, are the perfect partners to a variety of wines and bubbles. So, let’s dive into this sumptuous guide to pairing tacos with your favorite libations.

The Classic Beef Taco & Zinfandel

Let’s start with the classic ground beef taco, topped with cheese, lettuce, tomatoes, and a dollop of sour cream. The savory, rich taste of the beef pairs exquisitely with a bold Zinfandel. The black fruit notes and hint of spice in Zinfandel work wonders in enhancing the flavors of the beef, while its medium tannins don’t overpower the taco.

Fish Tacos & Sauvignon Blanc

Next up are the ever-so-popular fish tacos, usually made with a white fish, cabbage slaw, and a citrusy dressing. A chilled glass of Sauvignon Blanc is the perfect accompaniment. The wine’s bright acidity and citrus notes are fantastic with the fish, and its herbaceous qualities are a match made in heaven with the fresh slaw.

Chicken Tinga Tacos & Chardonnay

Chicken Tinga tacos, made with shredded chicken in a smoky, spicy tomato sauce, go beautifully with a lightly oaked Chardonnay. The wine’s hints of butter and vanilla harmonize with the smoky flavors, and its acidity is just right to cut through the richness of the sauce.

Carnitas Tacos & Tempranillo

The slow-cooked goodness of Carnitas tacos, with their tender pork and crispy edges, need a wine with a strong character. Step in Tempranillo! With its dark fruit flavors, hints of tobacco and leather, and subtle earthiness, it’s the perfect backdrop for the succulent carnitas.

Shrimp Tacos & Champagne

Shrimp tacos usually come with zesty lime, creamy avocado, and spicy salsa, so let’s bring in the bubbles! A classic Brut Champagne is the ideal match. The effervescence cleanses your palate from the richness of the avocado, while the bright acidity contrasts nicely with the spicy and citrusy notes.

Barbacoa Tacos & Malbec

Barbacoa tacos, known for their deep, rich flavors from slow-cooked beef, call for an equally intense wine. A full-bodied Malbec with its dark fruit flavors, hints of chocolate, and plush tannins is just what you need to bring out the best in these sumptuous tacos.

Vegan Tacos & Rosé

For our vegan friends, a veggie-loaded taco with guacamole pairs delightfully with a dry Rosé. The freshness and red fruit flavors of Rosé complement the vegetables, while its acidity cuts through the creaminess of the avocado.

As you can see, there’s a wine for every type of taco. Don’t be afraid to experiment with your pairings – the world of wine is vast, and the taco possibilities are endless. Just remember that the best pairing is the one that makes your taste buds dance! So, grab your favorite tacos, pour a glass of your preferred wine or champagne, and say “Cheers” to a taco feast like no other.
