Crispy, juicy, garlicky, and unapologetically bold.

Some nights call for tacos. Other nights call for getting your hands a little messy.

These Spicy Chili-Lime & Garlic Chicken Drumsticks deliver everything we love about Mexican-inspired cooking: bright citrus, smoky spices, fresh herbs, roasted garlic, and a fiery little kick.

The magic happens when the drumsticks roast to golden perfection, their skin becoming beautifully crisp while the meat stays tender and juicy. A generous squeeze of fresh lime brings everything to life, while roasted chilies add just the right amount of attitude.

They’re easy enough for a weeknight, impressive enough for a gathering, and practically begging to be served alongside a cold margarita.

Spicy Chili-Lime & Garlic Chicken Drumsticks Recipe

Prep Time: 15 minutes
Marinating Time: 30 minutes (optional)
Cook Time: 40–45 minutes
Servings: 4
Heat Level: Medium to spicy

Ingredients

  • 8 chicken drumsticks
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • Zest of 1 lime
  • 5 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon kosher salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 1–2 fresh red chilies or serrano peppers, sliced
  • 1 head garlic, halved crosswise, for roasting
  • Fresh cilantro or flat-leaf parsley, chopped
  • Fresh lime wedges for serving

Instructions

  1. Make the marinade
In a large bowl, whisk together the olive oil, lime juice, lime zest, minced garlic, smoked paprika, chili powder, cumin, oregano, cayenne, honey, salt, and black pepper.
  2. Give the chicken some flavor
Add the chicken drumsticks and toss until generously coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Fire up the oven
Preheat your oven to 425°F. Line a large baking sheet with parchment paper or lightly oil a roasting pan.
Arrange the drumsticks in a single layer, leaving space between each piece. Add the halved garlic head and scatter the fresh chilies around the chicken. Drizzle a little olive oil over the garlic.
  4. Roast to golden perfection
Bake for 35–45 minutes, turning the drumsticks halfway through, until the skin is deeply golden and the chicken reaches an internal temperature of at least 165°F. Dark meat becomes especially tender around 175–185°F.
For extra-crispy skin, broil for the final 1–2 minutes, watching carefully to prevent burning.
  5. Finish with freshness
Let the chicken rest for 5 minutes. Sprinkle with freshly chopped cilantro or parsley, add a squeeze of lime, and serve with the beautifully roasted garlic and chilies.

Turn Up the Heat

Want these drumsticks seriously spicy? Add another serrano pepper, increase the cayenne, or finish with a drizzle of your favorite Mexican hot sauce.

For a smoky variation, add a finely chopped chipotle pepper in adobo sauce to the marinade. It brings a rich, smoky depth that pairs beautifully with the citrus.

What to Serve Alongside

These drumsticks pair beautifully with Mexican street corn, cilantro-lime rice, grilled vegetables, or a fresh avocado salad.

And for the ultimate Taco Tuesday twist? Shred any leftover chicken, tuck it into warm corn tortillas, and top with crunchy cabbage, avocado, and salsa verde.

One recipe. Two delicious reasons to celebrate Tuesday.

The Perfect Sip

All that chili, garlic, and lime deserves a refreshing partner. A classic margarita with fresh lime and blanco tequila is a natural match. The citrus complements the marinade, while the cool, bright cocktail offers a delicious contrast to the heat.

Because a little spice makes life more interesting.
