Co-owners Mario and Lisa opened Los Chaparros in 2005. Mario, originally from Mexico City and Lisa, born and raised in California, both shared a love of cooking (and eating) Mexican food and wanted to share their passion with Hawaii. They took over the location once occupied by King Tsin Chinese restaurant in McCully and Los Chaparros was born.
In Mexico, it is a common practice to give someone a nickname based on their physical characteristics as a sign of affection. The name “Los Chaparros” means “The Shorties”, the nickname given to Mario (5′ 4″) and Lisa (4′ 9″).
We have a wide selection of Mexican entrees, popular appetizers, salads, soups, and tortas. We also feature our popular horchata and fire roasted salsa, both housemade daily with fresh ingredients. Can’t decide? Our daily lunch specials might be a good place to start. You may want to try one of our breakfast offerings, such as Huevos con Chorizo, available all day long. Our bar serves Mexican beer, wine, sangria, tequila and margaritas with daily drink specials. Also, be sure to save room and try a flan, bread pudding, churros or banana flautas for dessert.
