We are stepping up the quesadilla game with a dish that is delicious and absolutely makes life worth living: the authentic, street-style Poblano Quesadilla. Hailing from the culinary capital of Puebla, Mexico, these masterpieces are miles away from the basic versions we grew up on. Crafted with flour tortillas, melty Mexican cheese, and filled with delicacies like delicate squash blossoms (flor de calabaza), earthy mushrooms, and crispy chicharrón, this is the ultimate comfort food upgrade.

Here is how to make magic happen in your own kitchen.

The Recipe: Authentic Puebla-Style Squash Blossom & Mushroom Quesadillas

The Ingredients

  • 4 Fresh flour tortillas
  • 1 cup Oaxaca cheese or Quesillo (shredded or pulled into strings)
  • 1 bunch Fresh squash blossoms (flor de calabaza), stems removed and gently rinsed
  • 1 cup Sliced mushrooms (cremini or button)
  • 1/2 cup Crispy chicharrón (pork rinds), gently crumbled (optional, but highly recommended for texture)
  • 1 clove Garlic, minced
  • A few sprigs of fresh epazote (or cilantro if you can’t find epazote)
  • 1 tbsp Vegetable oil (or butter, trust me)

How to Craft It:

  • Sauté the Filling: Heat a splash of oil in a skillet over medium heat. Sauté the sliced mushrooms and minced garlic for about 3–4 minutes until tender. In the last 60 seconds, toss in the delicate squash blossoms and epazote just until they wilt. Season with a pinch of salt and set aside.
  • Prep the Tortilla: On a hot comal or heavy-bottomed skillet over medium-high heat, place your corn tortilla.
  • Layer the Goodness: Immediately layer a generous amount of stringy Oaxaca cheese on one half of the tortilla. Top the cheese with your warm mushroom and squash blossom mixture, and scatter a handful of crispy chicharrón over the top for that perfect, savory crunch.
  • The Fold and Crisp: Fold the tortilla over to form a crescent moon. Cook for 2–3 minutes per side, pressing down gently, until the tortilla is beautifully crisp and spotted brown, and the cheese is fully melted and oozing out the sides.
  • Serve Hot: Slide it onto a plate and serve immediately with your favorite salsa verde or salsa roja.
