With a handful of spices and a simple roasting method, you can bring those same bold flavors right into your own kitchen. Whether you’re building tacos for Tuesday night, meal-prepping bowls for the week, or rolling up burritos for the whole family, this copycat chicken recipe delivers big-time flavor with minimal effort.

Ingredients

  • 3 tablespoons vegetable oil
  • 1¼ teaspoons sea salt
  • 2 teaspoons chipotle chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 2 pounds boneless, skinless chicken thighs, trimmed (about 8 thighs)

Instructions

  • Preheat the oven. Set to 425°F (220°C). Line a baking sheet with foil for quick cleanup.
  • Season the chicken. In a large bowl, toss the thighs with oil and all the spices until evenly coated.
  • Bake. Arrange chicken in a single layer and roast for 30–35 minutes, flipping halfway through, until the internal temp hits 165°F (75°C).
  • Slice & serve. Rest a few minutes, then slice into strips. Perfect for tacos, bowls, salads, or burritos.
