Slow Cooker Mexican Beef Barbacoa

Ingredients
The Beef:

  • 3 ½ – 4 lbs Beef Chuck Roast (trimmed of excess outer fat, cut into large 3-inch chunks)
  • 2 Dried Bay Leaves
  • 1 tbsp Cooking Oil (avocado or vegetable oil)

The Blender Sauce Hack:

  • 3-4 Chipotle Peppers in Adobo Sauce (plus 2 tbsp of the adobo sauce)
  • 1 cup Beef Broth
  • ¼ cup Fresh Lime Juice
  • 2 tbsp Apple Cider Vinegar
  • 5 cloves Fresh Garlic, peeled
  • 1 tbsp Ground Cumin
  • 1 tbsp Dried Oregano (preferably Mexican oregano)
  • 2 tsp Ground Cloves
  • 1 ½ tsp Salt
  • 1 tsp Black Pepper

For Serving:

  • Warm corn or flour tortillas
  • Finely diced white onion
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  • Blend the Sauce: Add all sauce ingredients (chipotle peppers, adobo sauce, beef broth, lime juice, apple cider vinegar, garlic, cumin, oregano, cloves, salt, and pepper) into a high-speed blender. Puree until completely smooth.
  • Sear the Beef (Optional Upgrade): Heat oil in a large skillet over medium-high heat. Quickly sear the beef chunks for 1–2 minutes per side to build a golden crust, then transfer the meat into your slow cooker liner. (If in a rush, skip the sear and place raw chunks straight into the slow cooker!)
  • Set & Forget: Pour the blended chipotle-citrus sauce evenly over the beef. Nestled the bay leaves down into the liquid. Cover and cook on LOW for 8 hours (or HIGH for 4 to 5 hours) until the beef is pull-apart tender.
