Cheesy Vegetarian Chorizo Dip with Melissa’s Soyrizo: The Skillet Everyone Will Be Fighting Over

October 14, 2026
Cheesy Vegetarian Chorizo Dip

Hot, bubbly, cheesy and loaded with bold Mexican-inspired flavor, this easy Vegetarian Chorizo Dip made with Melissa’s Soyrizo is about to become your favorite party appetizer.

Some appetizers are meant to be shared. Others require a little negotiation. Meet the ultimate crowd-pleaser: a sizzling skillet of melted cheese, savory Soyrizo, roasted green chiles and fresh cilantro, served with plenty of crunchy tortilla chips.

It’s rich, creamy, slightly spicy and dangerously easy to keep dipping into.

The secret ingredient? Melissa’s Soyrizo, a plant-based alternative to traditional Mexican chorizo that brings all the smoky, seasoned flavor without the meat. And when you combine it with gooey Monterey Jack, sharp cheddar and a little cream cheese, something wonderful happens.

Vegetarian appetizers suddenly become the most popular thing at the party. Traditional Mexican chorizo is known for its bold combination of chile peppers, spices and savory richness. Melissa’s Soyrizo captures that distinctive flavor using soy protein and a delicious blend of seasonings. It’s a wonderful meatless alternative for tacos, breakfast burritos, casseroles and, as we’re about to demonstrate, an absolutely spectacular cheese dip.

Melissa’s Soyrizo contains no cholesterol and has 60% less fat than traditional chorizo, according to the brand.

Cheesy Vegetarian Chorizo Dip Recipe

An irresistible skillet dip loaded with spicy Soyrizo, melted cheese, roasted green chiles and fresh cilantro.

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 8–10

Ingredients

  • 1 package (12 oz) Melissa’s Soyrizo, casing removed
  • 1 tbsp olive oil
  • ½ small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and diced (optional)
  • 1 can (4 oz) diced roasted green chiles, drained
  • 4 oz cream cheese, softened
  • ½ cup whole milk
  • 1½ cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ tsp smoked paprika
  • 2 tbsp fresh cilantro, chopped
  • Tortilla chips, for serving

Instructions

  1. Preheat the Oven
    Preheat oven to 400°F.
  2. Sauté the Aromatics
Heat olive oil in a 10-inch oven-safe skillet over medium heat.
Add diced onion and jalapeño and cook for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
  3. Cook the Soyrizo
Remove the Soyrizo from its casing and add it to the skillet.
Break it apart with a wooden spoon and cook for 4–5 minutes, stirring frequently, until heated through and slightly browned.
Stir in roasted green chiles and smoked paprika.
  4. Make It Cheesy
    Reduce heat to low.
Add softened cream cheese and milk, stirring until the cream cheese melts and the mixture becomes smooth.
Remove the skillet from the heat. Gradually fold in 1 cup Monterey Jack and ½ cup cheddar until incorporated.
  5. Bake Until Bubbly
Sprinkle the remaining Monterey Jack and cheddar evenly over the top.
Transfer the skillet to the oven and bake for 8–10 minutes, until the cheese is melted and bubbling around the edges.
For a beautifully golden top, broil for an additional 30–60 seconds, watching carefully.
  6. Garnish & Serve
Remove from the oven and sprinkle with freshly chopped cilantro.
Serve immediately in the skillet with plenty of tortilla chips.
Be careful! That skillet will be hot, and those chips will disappear quickly.

Make It Your Own

Turn Up the Heat: Add diced serrano peppers, extra jalapeños or a drizzle of your favorite hot sauce.

Add Some Freshness: Finish with diced tomatoes, green onions or a spoonful of pico de gallo.

Give It a Smoky Twist: Add a spoonful of finely chopped chipotle peppers in adobo sauce.
