Rosa Mexicano is an upscale Mexican chain, and their pomegranate margarita has been on the menu long enough it should be considered a modern classic. Pomegranate juice does something specific to tequila – it grounds it, gives it a savory-sweet weight that fresh lime alone can’t hit. This is a marg for people who think regular margs are too sweet, too limey, too much of the same thing they had last week.

Pomegranate margs actually batch surprisingly well because they’re blended already. For 6 servings, blended in two batches of 3:

Blend, pour immediately into chilled glasses, garnish. Repeat for second batch – do not let the first batch sit while you make the second, or the top will start separating.
Can I use a shaken version instead of blended? You can, and it’ll be a fine drink – but it’ll taste noticeably different. Shaken gives you clear liquid and separated flavors; blended gives you the Rosa Mexicano cloudy, integrated texture.
Where do I find real pomegranate juice? POM Wonderful is in the refrigerated juice section of most grocery stores. If your store doesn’t carry it, Whole Foods or Trader Joe’s will. Look for “100% pomegranate juice” on the label – nothing added.
Can I use grenadine? No. Grenadine is sweetened pomegranate syrup, often with artificial coloring. It’ll turn this into a pink, syrupy drink instead of the tart, layered marg it should be.
How much do fresh pomegranate seeds actually add? Visually – a lot. Flavor-wise – very little. They’re worth it if you have a pomegranate lying around, skippable if you don’t.
Can I make this with rosé tequila or reposado? Reposado you can – it’ll be a heavier, more autumnal version of the drink. Rosé tequila (like Neurita or Codigo Rosa) actually works beautifully here – reinforces the pomegranate color and adds subtle red-wine notes. Both are worth trying if you have them; blanco is still the default.
